The only way to change the player's choice is to restart the game from the beginning, starting a new game, or even play chapters individually (available after full playthrough), giving the player the chance to overwrite an old file or create a new one.
The Dark Pictures has a strict auto-save system to prevent players from reloading a previous save file to an earlier point in the game if they regret an in-game decision they have made. The Dark Pictures Anthology is the successor of Until Dawn and has the same gameplay mechanics.
